Upgrade your next mojito with this lime and mint infusion. Once your lime and mint rum is ready, make yourself a delicious drink using the recipe below.
Make the Rum:
Thoroughly wash 2 limes.
Using a vegetable peeler, carefully peel the lime. You want to peel off the green rind, but not the white pith underneath. (The flavor is in the rind. The pith is bitter.)
Place the lime peels and a handful of washed, fresh mint leaves in a clean, 1 pint mason jar.
Fill the jar to the top with your favorite white rum. (Do not use dark or spiced rum.)
Tightly cover the jar and put it in a cool, dark place - like a pantry or cupboard.
Let the jar sit for 14 days, gently swirling the jar every day or two.
After 14 days, strain the lime peel and mint out of the rum.
Discard the lime peel and mint.
Enjoy the rum!

Ingredients
- 2 oz lime and mint rum
- 1 oz simple syrup
- 0.5 oz lime juice
- 5-6 fresh mint leaves
- Club Soda
Instructions
Place mint leaves in a glass with lime juice.
Muddle using a muddler or the handle of a wooden spoon.
Add rum and simple syrup.
Fill the glass with ice and top with club soda.
Give it a stir before enjoying!
